[25a bottom] Rami bar Abbah explained that the Torah requires skinning and dismembering for an Olah offering, which is the same practice that butchers use when preparing meat for humans consumption. The Torah therefore teaches the Derech Eretz (proper way) that a person should not eat meat before the skinning and dismembering.
Similarly, the Gemarah learns that a person should not eat a garlic or onion from its top (rather eat it from the side of its leaves/ the bottom), so as not to be a glutton. Also, one should not drink his cup of wine in one big swallow so as not to appear like a guzzler.

T’s Lesson: Derech Eretz must always be applied, when it comes to eating as well. Even if a person is ravenously hungry, he should ensure to follow the proper laws of shechita and kashrut; preparing the meat properly within halachic guidelines. Before we actually eat the food, we also pause to remember Hashem by making Brachos (blessings). Remember to serve Hashem and not just our physical appetites.
